Toxicological Assessment of Wistar Rats Fed with Feed Fortified with Processed Breadfruit

Background: The seed of breadfruit is a major food consumed in some parts Nigeria. It has been identified as an important leguminous that highly rich carbohydrates and protein with abundant minerals vitamins known to contain anti-nutrients. Aim: This study aims assess the possible toxicological effect feed fortified cooked, parboiled, grilled on liver kidney function parameters Wistar rats. Method: Kidney tests were carried out using standard diagnostic methods. Results: results test revealed 30% cooked parboiled showed significant (p<0.05) increase creatinine level while Urea was observed all groups fed processed respect normal control group. Alanine Transaminase (ALT) activity group breadfruit, Aspartate (AST) exception breadfruit. A Alkaline phosphatase (ALP) seen 50% Conclusion: rise enzymes blood rats feeds indication prolonged consumption may have adverse renal hepatic function.
